UN chef Dan Lopez spoke about the peculiarities of the development of the menu for heads of state and government who arrived at the general political debate of the UN General Assembly. According to him, the preparation for lunch, which is traditionally held before the start of the discussion, began in January. Reported UN News Center.

According to Lopez, the United Nations prefer classic French cuisine. “Once we were preparing veal en papillote (veal baked in parchment paper - approx. "Tapes.ru"), chicken mousseline (chicken muslin - approx. "Tapes.ru"), foie gras. They love lamb, veal, filet mignon - in any case, for twelve years of my work here, these dishes were on the menu. We (also) are cooking something fishy, ​​something vegetarian, ”said the chef.

The menu was developed taking into account the specific preferences of some participants of the meeting (diet, vegetarianism, and so on). Then the protocol service officers tasted the resulting dishes and, together with the chef, decided which ones would be served and which ones would not. The final menu was approved at the end of July.

Lopez said that cooking for the participants of the General Assembly began two days before the event.
