'20 restaurants in one': Immigrant Food restaurant opens next to the White House

Immigrant Food restaurant opens in Washington, which glorifies immigrants by mixing cuisines from different countries. Here, visitors can volunteer with local organizations that support immigrants.

Chef Enire Limardo decided to develop a menu for the restaurant, "rethinking relocation to America in the form of dishes."

“It's like combining 20 different restaurants in one,” said the Food & Wine chef. Soon, Limardo got his way, and on November 12, the Immigrant Food fast food restaurant will open almost a block from the White House.

The chef will offer a menu of dishes that combine cooking methods and tastes of the largest immigrant groups in Washington. Accordingly, the menu will be ambitious.

The Viet Vibes dish combines Vietnamese and Caribbean cuisines. It includes adobo chicken, spicy rice noodles, kale, mango cubes, peanuts and spicy fo vinaigrette sauce.

The Mumbai Mariachi dish, inspired by the cuisines of Mexico, India and Greece. This is a steak grated with spices, cabbage, mango and smoked mango chipotli sauce.

To combine cuisines that are rarely compatible, Limardo studied "every country, every ingredient, every spice." He literally found connections between migrations.

He began with Ethiopia and El Salvador, the two countries with the largest immigrant populations in the District of Columbia, looking for ways to connect them.

“I was inspired by Ethiopian lentils - the taste profile is slightly sweet and spicy. I went to El Salvador and found that they used pumpkin seed dressing. The scent of pumpkin seeds goes well with the spice and sweetness of lentils. ” It turned out to be a Columbia Road dish, with grains of Ethiopian lentils, pickled Larocca flower buds (edible flowers) and crumbs of Salvadoran cheese.

Limardo will open the restaurant in partnership with Ezequiel Vazquez-Ger and political adviser Peter Schechter. Shekhter said that he “wants to help fight the growing anti-immigrant sentiment,” and then continued: “The idea was to open a restaurant that really glorifies the history of America, that is, the history of immigrants.”

The menu will also include a variety of international teas and sodas. In addition, Immigrant Food will invite visitors to register to contribute or volunteer at five local immigrant service organizations. Out of hours, the restaurant will provide space for these nonprofit organizations to conduct English classes, seminars, legal advice, and more.

“We want to make our space accessible when the need arises for one of these organizations,” Scheckter explained.

The space is certainly designed by architects Maidan Michel Beauvais and Sommer Moore from Design Case. The materials, colors and structure of the restaurant reflect the culture of the cuisine presented on the menu. It has everything: from low tables, like in the Middle East, to tables common in cafes from a European beer restaurant, as well as seating with crossed legs.

“We strove to create a restaurant that would reflect how cool immigrants are and how fundamental they are to the economy, culture, lifestyle,” Scheckter concluded.
